Varietals la crescent and vidal blac grown on the Warren property are used to make Chaos, a traditional method sparking wine. Fermented with wild yeasts naturally occurring on the grape skins, aged on the lees in bottle, then riddled and hand disgorged with no sulfur added and no sugar dosage.
